...give Apple the option to either KILL the lawsuits OR have all Google apps pulled from their platform?
No more Google search, YouTube, Google maps, Google voice, chrome, or anything else Google on iPhone. Show Apple that some they want to play rough, Google can too.
The perfect time to do that would be just before the iPhone 5 drops to have it stripped of YouTube and other such software.

I don't think Apple would care if their app store was devoid of Google apps.

I think Google would care more than Apple would, most apple users are fine with whatever apps are stock

Google makes money off advertising, which is built into all of their apps. They make money when Apple users use them.
