Default HTC One (M7): stock recovery on a rooted device

Hello I'm new to this rooting stuff. I rooted my HTC One a couple of months ago and I was wondering if there is anyway to update the OTA without completely unrooting my phone.

In most cases, no. The update will check the device to make sure it's not modified. If you want an update the easiest thing is to flash a ROM based off that update. Often times a stock, rooted ROM based on the update will be made available. Otherwise, you may need to return to stock at which point you can update, but may not be able to immediately re-root.
