    I have the HTC One (M7) from T-Mobile unrooted and all is up to date (Sense 6, etc.).
    The Stocks app is currently disabled and the option to enable is greyed out.
    Is this a discontinued app?
    Is there a way to get rid of it?
    Or even enable it so I can actually use it?

    Try wiping the cache partition, and then trying to enable Stocks again. https://support.t-mobile.com/docs/DOC-6526
