I think I learned why this happens. The "double-tap to unlock" lockscreen that appears while on a call is due to the phone either not having a proximity sensor, or turning the proximity sensor off (which is possible with some phones in the Phone app, under Menu>Call Settings). If the screen remains on during a call, the lockscreen appears to prevent your face from accidentally pressing any of the onscreen buttons.
