What is the back up everything on your S4 before getting the S5?

I used Kies last time & was not successful with finding all of my stuff on my laptop to re-install on my new phone

As you mentioned Kies is the preferred method for Samsung devices.

However you could use Helium backup from the Play Store. It doesn't require root access either.

Aside from that make the best of Google's own backup with your contacts, pictures, etc. This can all be done from your Settings/Back up & Sync options.
