Since updating I am no longer able to screenshot using Home key + Power key. What can I do?

I have a Galaxy S5, and just updated it to version 4.4.4, last week. Also, I do NOT want to use the "swipe" method. I have all that disabled.
 
Welcome to Android Central! Check to see it pressing Power and Volume Down together for half a second works--that's the standard button press combination on most devices (although I know that Samsung typically uses the Power/Home combo).

If that doesn't work, the update, if you received it over the air (as opposed to installing it from a file, using Odin or Kies), is "under warranty". IOW, the carrier broke your phone, so the carrier has to fix your phone. A reflash usually fixes problems like that. (OTA updates aren't as foolproof as the carriers would like you to believe - or believe themselves. AT&T had to replace my phone because an update actually caused hardware damage.)
