When I upgraded from a s3 to a s4 I lost so much data, photos, etc. that I am reluctant to do it again. Your experience with a an s5 upgrade?

I have no such experience I'm afraid, but you shouldn't be losing personal data and photos when changing from one phone to another....at least, ones using the same OS, as yours obviously do. Everything backed up to your Google account, for example, will download into the new phone when you sign in to your account on the new phone. Photos saved to a Cloud storage service can be similarly accessed from other devices.

You will lose anything you've chosen to store to the INTERNAL SD on the device. This is true with ANY device. If you transfer the stuff to an EXTERNAL SD card, or email it to yourself, then you won't lose anything - it's completely up to you.
