I was originally a BlackBerry fanboy, but I've since gone to iPhone and now I want to try Android. BUT, I HATE TouchWiz.

I've used an HTC One M8, and the Sense UI is OK...

I know nothing about Android. Can someone tell me if it's possible to get Sense running on a S5?

Nobody's done it as far as I know, but you can put blinked and the sense launcher bits on, although it doesn't run very well.
When you say you have touchwiz, the S5 KitKat and lollipop versions are very different to older ones. You might like it.
And you can easily install GEL or Nova launcher.

What is it about TouchWiz, specifically, that you find distasteful? You can replace the TouchWiz launcher and disable any apps you don't care for. I've had the S3, S3 Mini, Note 2, S4, S5, Note 3, Alpha, and Note 4 and this approach has always worked exceedingly well for me to provide a extremely smooth and lag-free experience when compared to other phones I've had like the G2, Nexus 5, Razor, and Razor Maxx.

I'm always curious to hear what it is about TouchWiz that folks dislike so.
