I have had frequent complaints that people can't hear me talking while I'm using my Galaxy S5, I'm a loud talker by nature so this confuses me when I'm told to speak up, supposedly I sound as if I'm mumbling, is there any way to adjust the microphone? or another control on my phone?

That would be illegal, since the phone is a radio transmitter and has to be set to certain regulations (which ones depend on where you are, but they're about the same for all countries as far as audio level imposed on a signal in cellular service is concerned).

Check the mic hole. If there's dirt or lint in there, use a pointed wooden toothpick to pull it out. That can block the sound.

If not, the phone should still be under warranty - have it repaired or replaced. The mic could be low in sensitivity, some part could be out of tolerance - that's all covered by the warranty. (Unless you got water into the mic.)
