I was working for a company who used outlook through their server (Not sure if it is POP or IMAP) the IT (Information technology) department needed details from my phone to installed the outlook on my Samsung galaxy s4 an automatic password was used for security on my phone.
I now no longer work with this company, when they removed the outlook on my Samsung Galaxy s4 they reset my phone to factory settings. In this process i lost all my photos, contacts, apps, account apps ect.

Is it possible for the IT department to rest my phone to factory settings or does the phone do an automatic update to factory settings after the outlook is removed>

Removing Outlook or any app for that matter wouldn't automatically perform a factory reset. That has to be done manually by someone.

I can see the reasons behind IT doing a factory reset if you no longer work for the company to remove any company/business related stuff from the device.
