I am a cell phone novelist and ratherthan send new chapters with an email I'd like to just text it, but I cannot add a subject line to my MMS? I tried looking but it just is not there... and help?

On an MMS, yes - in the document. Not in the text. Emails have a subject header, texts just have 140 octets (which translates to 160 7-vit characters). You sould write

Subj: xxxx - see attached file

or something like that, but there's no "header" or any other structure similar to emails. (Text uses a format originally developed for pocket pagers, and "Call 123-456-7890" didn't need any headers.)
