I want to keep the pictures I take separate from the picture other people send me and are in my gallery

Open the camera app and see if there's a way to specify the same location of photos. It'll be within the settings of the camera app.

The photos will still be visible through the Gallery, but will be in a different folder directory. If you want to hide the Gallery App you can use an App to block specified apps from being accessed without a pass code.

Pictures aren't "in your Gallery", Gallery is an app that shows all non-hidden pictures on your phone. Create folders - each one will show as an album in Gallery - and put the pictures in the folders you want them to be in. (If they can be seen, Gallery will show them - if Gallery doesn't show them, they can't be seen. There's no "show in other apps but not Gallery" choice.)
