I have a Samsung Galaxy S3. I am purchasing an HTC I want to transfer all my stuff from the the S3 to the HTC. I have to get all the stuff off the S3 before I go buy the HTC. Then when I have the HTC activiated i want to download all my stuff that was on the S3. I am transporting my cell # from AT&T (S3) to Cricket (HTC).

    Is this possible

Your apps, Google stuff like Google contacts, Google calendar and some other stuff such as WiFi passwords, etc can be backed up by going to Settings > Backup & restore > Enable Backup my data.

Otherwise, for backup of everything else, such as app data, SMS, etc about the best you can do without rooting the phone is use Helium, which requires a PC. It will backup most stuff, but not *everything*.

Next best is probably MyBackup Pro which does not require a PC, but will not backup quite as much.
