You can't really do that without voiding the warranty. But when Verizon gets the phone, one of the first things they'll do is wipe your data partition. (Most reputable shops, even little one-man operations make that a hard and fast rule, so if you sue them later for stealing your data they have years and years of history of not having the data there to steal, so you'll lose.) They don't want your data. The tech who works on your phone doesn't want your data. (And he's ever found looking around in your phone, firing will be the least of his worries.) Even if he sees it (I used to work on GB of medical data from customers every day), by the time he gets to the next phone, he couldn't tell you anything he saw on your phone - his mind is now on the next one.

I wouldn't worry about it, unless you're a terrorist or you have plans on the phone on how to assassinate the president. Porn? Bank account passwords? They don't even look. (They don't have the time. If you have to do 10 phones a day, you do them as fast as possible. If you're finished at 3, you look good, because you can do more than 10. If you waste time looking at people's pictures, you're going to fall behind and get fired.)
