I read that most carriers add a lot of their software and even delete some of the android software. If unlocked after 6 months, could I delete the carrier's software and somehow return to "original" settings?

As far as I know that stuff is there to stay unless you unlock, then root. You can disable all the carrier stuff so that it doesn't affect performance w/o unlocking and rooting though.
