Just bought it brand new in Germany and its locked to European networks only (said unlocked in store but that means to European networks only I guess) purchased unlock code and currently awaiting it via email Im wondering if it Will work on rogers Canada LTE network or Sasktels LTE network(both Canadian) as I am moving home and Will be pissed if it doesn't. Also did the update to lollipop 5.0 and my phone is currently slower then my old s2 that runs on 4.0.4 does anyone recommend downgrading the S5 to kitkat until Samsung fixes their os problems?

Welcome to Android Central! This site reports that phone's LTE band compatibility to be:
    LTE 2100, LTE 800, LTE 1800, LTE 2600,LTE 850, LTE 900

According to Wikipedia, Rogers uses 700, 1700, and 2600, while Sasktel uses 1700 and 2600. So it might not be completely compatible, unless you have the 2600 band in your area. Check with the carriers yourself to see if they might have added any bands to their spectra.
