Samsung S5 with Verizon. Texting, calculator, calendar, settings, etc. are all white backgrounds. How can I make the default background color black?

Welcome to Android Central! White background is the default for Material Design (Lollipop's design language), so the ability to change background is dependent on an app having that option in its settings--many apps don't have that option. You could try going to Settings>Accessibility, and turn on Color Inversion, but that might look pretty ugly, and it also warns that battery life could take a hit.
