Can the number I use for initial Project Fi setup be replaced with another number later on?

Since I'm not quite ready to cut the cord with my old cell service yet, I want to set up Project Fi with new number. If at some point in the future, I want to cancel my old service, does Project Fi have any provisions for replacing my original Project Fi number with my old cell phone number?

yes you can.
I contacted Fi with the following question.
"My at&t contract will expire after two months. Is it possible for me setup initially with my Google Voice number but then later port my at&t number?"
This is what the nice lady at Fi replied. you can open the attached picture of the email.
