I'm struggling to programme one touch dialling. For example hold down button 2 and it dials a number, which you dial regularly. Hold down button 3 for another number you call regularly.

Hello. Which device and Android version do you have?
With stock devices on Lollipop, you can have speed dial numbers on the Phone app Speed Dial tab.
and in Contacts - name - 3 dot menu - Place on Home Screen, you can have individual contact shortcuts on a home screen.

On my previous Samsung on KitKat, there were single contact widgets to place on a Homescreen.

I don't know of a device where you can long press a dial pad number, but there could be, or a replacement phone app that does.
