KitKat and Lollipop are the nicknames for different versions of the Android OS. They go in alpha (as well as numeric) order, so Lollipop (5.0) is newer than KitKat (4.4).

The Launcher is the part of the software that controls your homescreen, app drawer, launching apps and most of your customizations. Every phone has a stock launcher that does this, but Android allows you to install custom third-party launchers...Nova, Apex and Action being some of the most popular. These custom launchers give you more freedom to change how your device looks and acts beyond what it can do out of the box. This includes custom icon packs, gesture controls, animations, look and layout of the app drawer, number of homescreens, etc.

Launchers allow you to customize your home screens. I suggest Nova launcher and using whatever icon pack you like.
