How can I recover deleted photos and videos from Galaxy S6 (Verizon) on 5.1.1?

I completely and by accident deleted an entire folder on my gallery app/camera storage. I did not have the automatic back up through google or dropbox and they are not backed up anywhere else. I tried running it through the computer software Dr Fone for Android through Wondershare but it wont let it root my phone in order to recover anything. (I have been keeping it turned off or on airplane mode since it happened).
How can I safely root my phone so I can recover my photos and videos? Im starting to get desperate.

Welcome to Android Central! As far as I can tell, there is no root exploit yet for 5.1.1 on the Verizon S6: Verizon Galaxy S6 / S6 edge 5.1.1 Root Status - androiding.how. Sorry!

From what I understand is this: in order to recover a lot of deleted files, you have to be rooted already. Once you start placing files on the device, it will overwrite anything marked to be deleted. So, just to do the process of rooting, you will most likely lose pictures.
