Welcome to Android Central! Go to Settings>Battery, and uncheck Fastboot, if you see it there.

What if the fastboot option is no longer an option from the battery section? Isn't there another way to disable fastboot?

I've read elsewhere that Lollipop takes away the ability to turn off Fastboot.

This link describes how you can access the Recovery menu even if you can't turn off Fastboot--see the steps under "B." Wipe Cache Partition HTC One M7 and M8 | Droider.eu

Yes, lollipop removes fastboot completely so you don't have to disable it first. Just joined so I can't post links, but Droider.eu is my site. If you haven't gotten around to sort it, just do a search there with "m7 cache" and you'll find a guide for M7 running lollipop
