Welcome to Android Central! SMS has a 160 character limit per message, so if it's a longer message, it'll get broken up. There may be a setting in your Messaging app to change a long text into an MMS message, which won't break it up (but requires mobile data to send, not the voice signal).

Most smartphones can send long SMS messages automatically (up to a certain limit) by sending several SMS messages with a special header that indicates that they are a numbered part of a multi-section message. Single SMS messages can be up to 160 normal characters long, and I think up to about 8 of these can be concatenated together.

Again most phones can re-assemble such messages and display then as one SMS message. It appears that the default messaging App on some Samsung phones is incapable of putting all the bits back together. You could try replacing the stock SMS app on the receiving phone with a different one to see if this cures the problem. (Send a new message to test it).

Unfortunately using MMS messages have drawbacks, most notably that they are charged for at outrageous rates (like 25p to send and up to 50p to receive and they are not included in SMS bundles), so you probably don't want to go down that route. Also beware that using Emojis in SMS messages will make some phones convert them automatically into MMS messages!
