How do I get rid of touch easy on my phone.

Try going to Settings - Applications (Manager) - All - Touchwiz Easy Home, press clear default, then go to the Touchwiz Home app there and ensure default is set (Clear Default greyed out).
You can also Reset App Preferences in Settings.
