I've been trying to look all over for answer or fix.

When I do a contact search on the Google Search Bar on the Samsung Galaxy S5, it will prompt with the most likely info. When you select a contact to view and then close it out. The contact now shows up in the Messages App, when you click on the Name, it's blank. I would have to constantly delete these, contacts out of the Messages app as they build up.

Besides using another Messaging App, how do you stop it from doing this?

Try wiping your app cache. Since this is linked to multiple apps, I'd suggest going to >About Device>Storage>Cache Data>Delete/Clear.

You could also try wiping system cache via recovery.
