Latest update force sets default app in Android 5.1.1

[AC Question]

Since the latest update to Android 5.1.1 (build: N910W8VLU1COK3 on Galaxy Note 4), my phone will only ask one time which app to use. No check box to "set as default app" or "always use" is provided. It then automatically uses that app every single time. The only way use a different app is to go into the app settings and clear the defaults, this has to be done every time that I want to use a different app! Sometimes I want to share to gmail, sometimes to outlook, sometimes to OneNote or upload to OneDrive, etc...

I don't want to be forced to set a default app! Help, how do I change this?
