What is optimal Android security?

I have recently switched over from the iPhone 5 to the Galaxy S6 Active and I think I'm happy I did so. The only thing that makes me really uncomfortable is that practically every app wants access to my camera and mic "at any time without your confirmation." I hate the way that's worded and I do not want to rely on the hopes that the app creator is good natured. I also don't want to be scared of installing apps because you know...it's a smartphone. At least on the iPhone you could disable permissions like the microphone when not in use.

Bottom line is I want to love Android and I'm not sure if rooting it is the only way to make that happen but I hear that comes with it's own set of problems possibly making it less secure than before. Any input is appreciated, thanks.
