I would like to be able to respond quickly to a call using the watch, even if its just to acknowledge the call.
If the watch has a microphone and speaker can this be used to answer or make calls through the paired phone?
Would it make a difference if the phone was paired by Bluetooth or WiFi?

Welcome to Android Central! I don't think there are any Android Wear watches that allow you to make calls directly on the watch. The Gear S2 can, but that's Tizen, not Android Wear. There are big (and often ugly) smartwatches from China that have their own SIM slot, and essentially act as a separate phone on your wrist, but I wouldn't recommend any of the them.

If the watch is paired through blue tooth with a phone and it has its own microphone and speaker why cannot this connection be used to allow conversations through the watch. Surely it would work like a paired connection in a car which has a speaker and microphone
