is there a way to change the automatic default?

Each time I open a file, the setting automatically default to open all files using the same program. I go to the menu settings and clear everything there but then it starts all over again. Also, I noticed that my messages are under "set default" so I can't make changes to that other than switching to hangouts. If I switch to hangouts then I can't use messaging. When sending attachments in messaging, I can't add captions, I have to send multiple messages. This is very annoying! Does anyone have any idea how to change any of these settings?
