    So this is the deal. I'll be casting a live "test" of an app on a projector and I'd like the audience to be able to see whenever I click on something... Something like a screen cursor for a tablet.

    I've been looking arround in the playstore with no luck.

    Could anyone refer to an app that does this?

    Welcome to the forums! You could activate "show touches" in the developer options and see if it works for you. If you haven't enabled them go to settings - about phone and tap 7 times on the build number. Now you can open the developer options. Go there, scroll down until you find the input section and switch show touches on. Tell us how it goes.
