I'm new to this! Is it safe to stop my running apps from running in the background ? Some I don't know what they are and I don't know if I need them?

Hello. Always things running in the background. Ram management keeps things open. If you close items, or use silly "doctor' type apps it will only cause Android to reopen them or your most used or background applications.

Almost full ram is normal, if that's what concerns you, so it's different to Windows for example.
