I read that the last software update for my Galaxy S7 Edge is creating problems with lots of users so, I was wondering if I could skip this update somehow and still be able to upgrade the software when Android N will come around.

    Thanks

You wouldn't have to wait for N. If there a bugs on an update, they are working on a patch to fix them. Just wait till the patch drops then update.

Depends. Are you in the US with a carrier branded device? If so, the carrier configured your phone to eventually auto update. There are ways you can get around that, like turning off the auto check for updates. If ever you are forced to update, a factory reset usually gets rid of any problems a bad update installation brings, so always have backups. Remember your updates are modified by carrier's engineers, hence they aren't exactly as released by Samsung (hence possible problems like bad update requiring a factory reset).
