    I was wondering if there were any ones that were simple and would benefit elderly/poor sighted people. I have tried launchers but none seem to be that good.

    Nope. Custom roms will always be somewhat unstable and eventually need some freshening up. Not what an elderly person needs.

    Get them a Samsung phone and it comes with a very good "Easy Launcher" that's part of Touch wiz.

    I agree with AlphaTango, a custom ROM won't help you. Samsung Easy Mode is a good choice or using some launchers specifically designed for seniors. Necta, Big or Wiser seem to be very popular.

    A mobile app might solve the problem - there are only 6-8 apps on it, and the icons are huge. You only see what you'd need in a car. (If you want something else you have to go to the app drawer.)
