I have a physical disability and have use of only one hand. I use the camera a lot on my Windows Phone. Does Android allow you to use a button (like the volume) to snap a picture?

What other things should I be leery about only using android one handed?

Yes. Most android devices do allow camera shutter volume button control. I know my galaxy note also had an option to make the keyboard capable for one handed use. Also the swype keyboard is really easy for one handed use.

Some phones let you open the camera with a double twist or a double tap on the power key. Most keyboards now include a one-handed layout to make things easier on big screens. Also, you should consider a custom launcher, like Nova, that includes gestures to launch apps or any system action, for example expanding the notification shade and much more. This will help to simplify your home screens and make one handed use much easier.
