I've got a few different email accounts in my Gmail app. Now I open another app (eg. Chrome), go to a website for example, and click "Share" to open the Share Menu. One of the options is the Gmail app. When I click it, it automatically opens a new message compose in Gmail, but it seems to default the "from" address to whatever I last used in the Gmail app. Is there a way to set a default "from" address? I keep sending links from my work or personal account when intending the other.

No, GMail has no default email address if you have multiple accounts in the phone. K9 Email CAN be set to send all email from the same From: address, even if you're sending it from another account. (I don't think there's an email app that lets you set a default From: address, then lets you change it on the fly - in K9, you'd have to go to Settings to change it.)
