Hi - deleted apps won't use up space, as long as you have properly uninstalled them.

    1) go in to Google play store - my apps - installed - make sure you can't see the apps there, if you can uninstall them.
    2) did you perhaps download the apps through apk files? if so then you'll need to delete the file in the download folder.
    3) Some apps leave behind random files, install a file manager from the play store and manually delete the left over folders of the uninstalled apps.

Welcome to Android Central! Are you talking about deleted apps using internal storage space, or deleted apps using data (i.e., mobile data or wi-fi)? If you're looking at the Data Usage menu and see an entry for "Deleted Apps," all that tells you is how much data those apps you deleted used in the past. It doesn't mean that they're currently using data.
