Have 4G LTE signal, but no connection LG G4 and V10 on Verizon

So both me and my father have an LG V10 and G4 respectively and while on our road trip across the US, we have noticed that for long periods of time, despite have perfectly fine reception, can not use our data. The Data icon just remains grayed out regardless of whether it is 3G, 4G, or even Edge. (Example: imgur link: /fy0Wlsj)
I know this is not an issue with reception because I can go check my signals and it says I have 4G signal (imgur link: /NpYhyqY) Sometimes if I restart the phone or mess with my network mode enough, I'll regain the ability to use my data, but I never know when it will vanish again. Any ideas?

Welcome to Android Central! Do you know if you're still on the Verizon network at those times, or roaming? If roaming, do you have roaming mobile data turned on? It's usually in the Settings>More Networks>Mobile Networks menu, or something like it. Look for a Data Roaming switch.
