How do I disable default app setting on marshmallow

Sense updating to marshmallow I can no longer choose what app I want to use when performing a particular task. When I fist perform a task, the system sets a default app wether I want it to our not. I can't stand this. If I want to send a message by text, mail, beam, Facebook our any other method I have to painstakingly go in and change my defaults every time. This goes for watching videos with other players, mail, messaging, EVERYTHING.. I don't want to disable the app I want to be able to choose between them. How do I get this ability back?
