How can I change back my Samsung 10.1 that changed to chinese and I was missing my installed apps?

I turned on my Samsung 10.1 and it changed to Chinese and I want to change it back. I got a friend to change the language to English. I can see all my apps still installed but are missing from the main screen. How can I change it back? It seems there is another layer under the main screen, possibly the system level, only guessing... Can anyone help me restore it back? I think its something to do with the on/ off button and volume buttons.
