Choosing which app to use every time I open a file, and not having a default

I have a galaxy s5. My phone was updated recently. Before the update, when I opened a file (for example, an image), I was asked which app to open it with (for example, "gallery" or "photos", or a similar app), and after choosing one, I was given the option of using that app just that once, or making it the default app for every time I open a file of that type. Now, after the update, when I open a file, like an image, and choose an app, like "gallery," that app immediately becomes the default, and if I want to open a different image file with a different app, I have to go into settings and reset the defaults. It's a huge pain. Is there any way this can be fixed, or am I just stuck with it?
