Is it possible to get rid of all the Samsung progs on my Note 8 and install Nougat?

I want to upgrade my Galaxy Note 8 and seeing as Samsung aren't going forward with it I may as well try something.

In a word "no". Nougat is currently only available on Nexus devices. Samsung will release it at some point but the Note 8 won't get it. There doesn't seem to be much activity on xda from a custom rom point of view
