S7 Galaxy - Phone Just Wiped Itself

[AC Question]

I setup my new phone, and got everything how I liked it. I then put my SIM in from my old phone and after a reboot it came back up and everything was fine. A few minutes later I got a shutdown message and when my phone came back up it was wiped.

Samsung Galaxy S7
SIM wasn't inserted until phone was fully setup.
