Google Assistant always triggering and scratchy sound when headphones are plugged in

I have some in-ear headphones which work perfectly on my computer. However, when plugged into the headphone jack of my S7 (not Edge), sometimes things start getting erratic - I hear a scratchy sound when my headphones are in (light), Google Assistant starts to trigger randomly and crazily, and my Spotify starts and stops for no reason or the song changes. Any explanation for this?
