I connected my S7 phone to my computer in order to transfer some photos across. I opened the DCIM folder to view and choose the photos i wanted to copy, and decided to delete some older photos first to free up space. However i accidentally seem to have deleted the new pictures instead. They are not in my phone recycle bin, or my computer recycle bin. I'm not sure where they went, or what software to use to find them again.

Since you did not transfer the photos to computer yet, they should be deleted from your galaxy phone. Is the "recycle bin" in your phone you mentioned an app? I have never used such apps, but it is possible that the deleted photos can be recovered with Android recovery. Root access is needed. (SD card photo recovery doesn't need root.)
