what do i lose when i delete cache and data from messages

Cache and data are two very different things. Cleaning cache just gets rid of bits of fragmented data and older bits the machine saves to boot the app up a little faster.
If you delete data from an app, it will forget everything about you and you will have to set it all up again from scratch.
