Are your contacts not syncing to Google?

If not, how you do it (IF you even can) depends on what device you have. What phone is it?

For what it's worth, there isn't even an option to create a contact on my phone (Nexus 6P), the only option is one that backs up with my Google account.

Actually, it's not difficult to copy contacts from your Android phone to PC. We just need connect Android phone to computer via USB Cable, then open a Android contacts manager tool like Vibosoft Android Mobile Manager, which can help us get access to Android phone's internal memory and sim card and export all contacts to computer for backup.

How does that software work without root? It should also be noted - the suggested app costs $40.

One way to do it is to use a contacts backup app.
It might create a file (probably XML) on your phone. Then you can copy that file to your PC.

The app I use is "sms backup & restore" by Carbonite
