I know you can add numbers to spam messages, but then the message is just sitting in the spam folder. I want it blocked so the message doesn't come through at all and I never see it.

If you want to turn off all texting, you can contact your carrier and have them turn it off for your phone. This is probably not what you want.

The details of blocking an text message depend on the SMS app you are using.
The SMS message will always be received by your phone.
An unblocked number will have the message stored in the message database.
Normally a blocked number will cause the message to be discarded and not saved to the database with no notification that it was received.

"Ignored" conversations, if your app supports it, will add the message to the database but not notify you that it arrived. This is good for group texts that you don't really want to participate in.

Check the settings of your SMS app to see what options are available to you.

    Which phone?
    Which version of android?
    Which carrier?
    Which SMS app?

Since you mention "spam", it almost sounds like you are referring to email messages, which are very different from SMS text messages.
