Google account change confusion

Hello, so recently I accidentally gave my email address to a scam website because I thought it was legit. I keep getting scam emails and I want to change my email address and delete the one getting scam emails because I'm worried about something. My Pixel is still a new phone and I haven't entered credit card info into my Google play account and since I am young I use my father's credit card and I don't want the scammer to take over the credit card info if they're capable of that. And because of this I really want to change the Google account used to create my phone when I first got it (the one getting scam emails). Will it be ok if I just create & add a new Google account to my device and delete the old account I used when I first bought the phone? Or will it do anything and screw up my phone? Sorry this question was VERY confusing and my bad grammar makes it worse but it would be nice if someone can answer. Thanks.
