How can I change camera processing settings?

I'm wanting to edit how the camera processes a photo in the background such as sharpening algorithims and noise reduction. How do I go about doing this?

Root the phone?
There are myriad camera apps but I'm not sure they go that deep..

Which camera?

Most (all?) phone camera apps don't do that much in terms of post processing. You need a photo editor app for that kind of thing.

If you want the most control over the results, you need to have the camera output DNG or raw files, not JPG files.
