Anyone have any suggestions on what to put on the auto-end list?
Seems like Slacker and a few other apps (dictionary, vzw nav, IM, maps, email) are always running.
So I wonder if its better to let these things run harmlessly in the background, rather than auto killing them just to have them start back up?

Yeah, you can try killing them once (manually) and see if they start back up. If they do, you're right, don't put them on the auto-end list, because you'll do much more harm than good.

I actually use Ti Backup to uninstall apps I don't think I'll ever use (after making a backup first). IM was one (I use Trillian), Slacker and that Video-thing were two others I already removed, but maps and email you have to keep I think...too many apps rely on them being there. Not even sure what "dictionary" even is, but it's probably not doing anything actively anyway.
